Ajvar Bean Soup

A hearty and comforting bean soup with a smoky flavor.

Ingredients:

  • 2 cups cooked white beans (or 1 can, drained and rinsed)
  • 1/2 cup ajvar
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 1 stalk celery, chopped
  • 4 cups vegetable or chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh parsley for garnish

Instructions:

  1. Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, carrots, and celery. Cook until softened, about 7 minutes.
  2. Add Beans and Broth: Stir in the cooked beans, ajvar, broth, thyme, and paprika. Bring the soup to a boil, then reduce the heat and let it simmer for 20-30 minutes.
  3. Blend (Optional): If you prefer a smoother soup, use an immersion blender to blend part of the soup or mash some of the beans with a spoon.
  4. Season and Serve: Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley before serving.
