A comforting, smoky chicken stew with a rich, flavorful base.
Ingredients:
- 2 chicken breasts or thighs, cut into bite-sized pieces
- 1/2 cup ajvar
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 2 carrots, sliced
- 1 bell pepper, chopped
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Sauté Chicken and Vegetables: Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until browned, about 5-7 minutes. Remove the chicken and set it aside.
- Cook Vegetables: In the same pot, add the onion, garlic, carrots, bell pepper, and potatoes. Cook for 5 minutes.
- Add Ajvar and Broth: Stir in ajvar and chicken broth. Bring the stew to a boil, then reduce the heat and simmer for 30 minutes or until the potatoes are tender.
- Add Chicken: Return the chicken to the pot and simmer for an additional 10 minutes, allowing the flavors to meld.
- Season and Serve: Season with salt and pepper to taste. Garnish with fresh parsley before serving.
