Ajvar Lentil Stew

A flavorful and spicy lentil stew perfect for cooler days.

Ingredients:

  • 1 cup dried lentils, rinsed
  • 1/2 cup ajvar
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add the onion, garlic, carrots, and celery. Cook for 5-7 minutes until softened.
  2. Add Spices and Lentils: Stir in the cumin, smoked paprika, and lentils. Cook for another minute to toast the spices.
  3. Add Ajvar and Broth: Stir in ajvar, vegetable broth, and the bay leaf. Bring the stew to a boil, then reduce the heat and simmer for 30-40 minutes until the lentils are tender.
  4. Season and Serve: Season with salt and pepper to taste. Remove the bay leaf before serving. Garnish with fresh cilantro
