Ajvar Vegetable Salad

Ajvar is a delicious Balkan spread made from roasted red peppers, eggplant, garlic, and various seasonings. It can also be used as a salad ingredient to add rich flavor to your dish. Here’s a simple recipe for making Ajvar Salad:

Ingredients:

  • 1 jar (about 12 oz) of Ajvar (store-bought or homemade)
  • 1 cucumber, diced
  • 1 small red onion, finely chopped
  • 1 bell pepper, diced (red or yellow)
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley or basil, chopped for garnish

Instructions:

  1. Prepare the Vegetables: Dice the cucumber, red onion, and bell pepper. Set aside.
  2. Mix Ingredients: In a large bowl, combine the diced vegetables with the Ajvar.
  3. Season the Salad: Add olive oil, red wine vinegar, oregano, salt, and pepper. Stir everything together.
  4. Chill: Refrigerate the salad for at least 30 minutes to let the flavors meld together.
