Grilled Lamb Chops with Ajvar

The rich, savory flavor of lamb is elevated by the smoky spiciness of ajvar.

Ingredients:

  • 4 lamb chops
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/2 cup ajvar (spicy or mild, depending on preference)

Instructions:

  1. Marinate the Lamb: In a small bowl, mix olive oil, rosemary, garlic, salt, and pepper. Rub the mixture all over the lamb chops and let them marinate for at least 30 minutes.
  2. Grill the Lamb: Preheat your grill to medium-high heat. Grill the lamb chops for 4-5 minutes per side for medium-rare, or longer for your preferred level of doneness.
  3. Serve with Ajvar: Once the lamb chops are done, remove them from the grill and rest for 5 minutes. Serve with a side of ajvar, either as a dipping sauce or spooned over the top.
