The rich, savory flavor of lamb is elevated by the smoky spiciness of ajvar.
Ingredients:
- 4 lamb chops
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1/2 cup ajvar (spicy or mild, depending on preference)
Instructions:
- Marinate the Lamb: In a small bowl, mix olive oil, rosemary, garlic, salt, and pepper. Rub the mixture all over the lamb chops and let them marinate for at least 30 minutes.
- Grill the Lamb: Preheat your grill to medium-high heat. Grill the lamb chops for 4-5 minutes per side for medium-rare, or longer for your preferred level of doneness.
- Serve with Ajvar: Once the lamb chops are done, remove them from the grill and rest for 5 minutes. Serve with a side of ajvar, either as a dipping sauce or spooned over the top.
