Ajvar isn’t just great with meats—it also enhances grilled vegetables!
Ingredients:
- 1 zucchini, sliced
- 1 red bell pepper, sliced into strips
- 1 eggplant, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/4 cup ajvar
Instructions:
- Prepare the Vegetables: Brush the vegetables with olive oil and season with salt and pepper.
- Grill the Vegetables: Preheat the grill to medium-high heat. Grill the vegetables for 3-4 minutes per side until they have nice grill marks and are tender.
- Serve with Ajvar: Arrange the grilled vegetables on a platter and drizzle with ajvar, or serve the ajvar in a bowl as a dipping sauce.
