Grilled Vegetables with Ajvar

Ajvar isn’t just great with meats—it also enhances grilled vegetables!

Ingredients:

  • 1 zucchini, sliced
  • 1 red bell pepper, sliced into strips
  • 1 eggplant, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup ajvar

Instructions:

  1. Prepare the Vegetables: Brush the vegetables with olive oil and season with salt and pepper.
  2. Grill the Vegetables: Preheat the grill to medium-high heat. Grill the vegetables for 3-4 minutes per side until they have nice grill marks and are tender.
  3. Serve with Ajvar: Arrange the grilled vegetables on a platter and drizzle with ajvar, or serve the ajvar in a bowl as a dipping sauce.
