A hearty and comforting bean soup with a smoky flavor.
Ingredients:
- 2 cups cooked white beans (or 1 can, drained and rinsed)
- 1/2 cup ajvar
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 1 stalk celery, chopped
- 4 cups vegetable or chicken broth
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Olive oil for sautéing
- Fresh parsley for garnish
Instructions:
- Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, carrots, and celery. Cook until softened, about 7 minutes.
- Add Beans and Broth: Stir in the cooked beans, ajvar, broth, thyme, and paprika. Bring the soup to a boil, then reduce the heat and let it simmer for 20-30 minutes.
- Blend (Optional): If you prefer a smoother soup, use an immersion blender to blend part of the soup or mash some of the beans with a spoon.
- Season and Serve: Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley before serving.
