A flavorful and spicy lentil stew perfect for cooler days.
Ingredients:
- 1 cup dried lentils, rinsed
- 1/2 cup ajvar
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 4 cups vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
- Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add the onion, garlic, carrots, and celery. Cook for 5-7 minutes until softened.
- Add Spices and Lentils: Stir in the cumin, smoked paprika, and lentils. Cook for another minute to toast the spices.
- Add Ajvar and Broth: Stir in ajvar, vegetable broth, and the bay leaf. Bring the stew to a boil, then reduce the heat and simmer for 30-40 minutes until the lentils are tender.
- Season and Serve: Season with salt and pepper to taste. Remove the bay leaf before serving. Garnish with fresh cilantro
