A rich and smoky twist on the classic tomato soup.
Ingredients:
- 1 can (28 oz) crushed tomatoes
- 1/2 cup ajvar
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 cups vegetable broth (or chicken broth)
- 1 teaspoon dried basil
- 1/2 teaspoon sugar (optional)
- Salt and pepper to taste
- 1/4 cup heavy cream (optional)
- Fresh basil leaves (for garnish)
Instructions:
- Sauté Onion and Garlic: In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another 1-2 minutes until fragrant.
- Add Tomatoes and Ajvar: Stir in the crushed tomatoes, ajvar, and broth. Bring to a simmer.
- Simmer: Add basil, salt, and pepper to taste. Let the soup simmer for 20-25 minutes, stirring occasionally.
- Blend the Soup: Use an immersion blender or regular blender to blend the soup until smooth. If it’s too thick, add a little more broth to reach your desired consistency.
- Finish: Stir in the heavy cream for a creamy texture (optional). Adjust seasoning if needed.
- Serve: Garnish with fresh basil leaves and serve with crusty bread.
