Ajvar Chicken Stew

A comforting, smoky chicken stew with a rich, flavorful base.

Ingredients:

  • 2 chicken breasts or thighs, cut into bite-sized pieces
  • 1/2 cup ajvar
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Sauté Chicken and Vegetables: Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until browned, about 5-7 minutes. Remove the chicken and set it aside.
  2. Cook Vegetables: In the same pot, add the onion, garlic, carrots, bell pepper, and potatoes. Cook for 5 minutes.
  3. Add Ajvar and Broth: Stir in ajvar and chicken broth. Bring the stew to a boil, then reduce the heat and simmer for 30 minutes or until the potatoes are tender.
  4. Add Chicken: Return the chicken to the pot and simmer for an additional 10 minutes, allowing the flavors to meld.
  5. Season and Serve: Season with salt and pepper to taste. Garnish with fresh parsley before serving.
