This platter has a Mediterranean flair with bold and tangy flavors.
Ingredients:
- Ajvar (roasted red pepper ajvar works best)
- Cheeses:
- Goat cheese (soft)
- Manchego (firm, slightly tangy)
- Halloumi (grilled if desired)
- Fresh veggies: Cherry tomatoes, cucumber slices, and bell pepper strips
- Pita bread or crispy flatbreads
- Olives: Green and black olives
- Hummus (optional)
Instructions:
- Arrange the Cheese: Cut the Manchego into wedges and place the goat cheese in small mounds. Grill the halloumi (if desired) by slicing it into thick strips and pan-frying it until golden brown, then add to the platter.
- Add Ajvar: Spoon ajvar into small serving dishes and place them strategically around the platter.
- Add Fresh Veggies: Slice the cucumber, cherry tomatoes, and bell peppers, then arrange them alongside the cheeses.
- Pita or Flatbread: Cut the pita or flatbread into small triangles and arrange around the platter for dipping.
- Serve with Olives and Hummus: Add bowls of green and black olives and a small dish of hummus for extra Mediterranean flavors.
